Pasta Italiano

Originally published in the December 1993/January 1994 issue of FOX CITIES Magazine.

1 T. butter
10 thin slices green pepper
10 thin slices red onion
1/3 cup black olives
1 tsp. dried oregano
1 tsp. dried basil
1 1/2 T. minced garlic
1/2 cup sliced mushrooms
1/2 cup diced fresh tomatoes
8 oz. diced hot Italian sausage, cooked
3/4 cup tomato sauce
Grated Italian cheese
Cooked linguini

Melt butter in a saute pan and add all spices and vegetable ingredients. Sauté until peppers and onions are soft. Add cooked diced sausage. Stir in until sausage is hot. Stir in tomato sauce and pour over cooked linguini. Sprinkle with cheese and fresh basil.
