Mobile Options Add Charm and Convenience
While weddings are still momentous, larger than life occasions—regardless of the size of the actual celebration—couples are going about piecing together the components differently.
Rather than choosing a traditional venue and solely using their food, beverage and other “in-house” options, customization and personalization are reigning supreme.
“Weddings today have moved away from focusing on following tradition and toward custom events that reflect who the couple is, where they’ve been and what they treasure,” Laura Rommelfanger, Owner & Event Planner of OshPosh Events, says. “Couples want to be unique and creative. They want their special day to be memorable.
“We’re seeing events take place in non-traditional locations where most everything needs to be brought on site. Some are indoors like a brewery, a museum, a wine bar or even a library. Some are outdoors like a park, a farm, a backyard or a rooftop.”
With new, unique celebration sites as options and the additional planning those require, other logistical planning moves its way to the forefront.
“Mobile vendors often offer solutions to roadblocks that couples might bump up against when planning their day at a traditional site,” Rommelfanger explains. “For example, we see very close family or friends officiating ceremonies instead of ordained clergy so that a ceremony can take place anywhere at any time. Tiered wedding cakes are often replaced by unique sweet treats like a dessert display, a gelato bar or an ice cream sundae station that can be set up indoors or outdoors. Food, drinks, flowers, photo booths and more are often available through super cute trucks and trailers that can be delivered and set up just about anywhere.
“With mobile vendors, couples are no longer limited by the time and logistical constraints that traditional venues, timelines or expectations impose. They can think outside the box because there are vendors who will go to where they are.”
It’s true that couples are personalizing their ceremonies and receptions—long gone are the days of parents running the show or obligation dictating decisions—but they’re often considering their friends and family first. Using unique mobile vendors offers a way to do so.

What: Traveling Taps is your go-to mobile bar rental in Ripon, Wisconsin! Our vintage Piaggio Ape is equipped with 6 taps and a built-in refrigeration system, willing to travel anywhere in Wisconsin. Every great business has a story, and ours begins with a somewhat unexpected twist: Brady started brewing “decent” beer. (Yes, I said “decent.” The guy’s a genius, but his brewing skills took some time to ferment.) What started as an experiment in our kitchen quickly became a shared hobby that got us thinking—what if we kegged his creations? The next thing I knew, TikTok’s “For You” page was planting an even bigger idea: a charming Piaggio Ape transformed into a fully functional mobile bar.
How does using Traveling Taps work? How can it be customized for couples and their special days? First contact us about booking our mobile bar for your special event at [email protected]. Your date will be reserved by a signed contract and a 50% down payment. Next, you will have a beverage consultation to help you curate the perfect drink menu.
Finally, you can tap that keg and let Traveling Taps do the rest. For every experience we offer customizable bar menus to fit the theme of your event. The couple can pick signature cocktails, themed decorations that align with the event’s décor, or customize the bar with branded elements. For example, we have had custom drink tags, florals from the ceremony repurposed, reusable glassware for specific cocktails, custom stir sticks, branded orange peels for garnish, and edible cocktail toppers.
Specifically, what kinds/options of beverages do you offer? We offer a wide array of exciting drinks for every taste and occasion. Reflecting on the past year, we have had kegged wine, micro brews, health conscious mocktails, nitro cold brew, a variety of juices, bloody Mary mix, prosecco, and signature cocktails. An event that stands out is a Tuscany themed wedding that had kegged prosecco, a sparkling alternative to champagne, poured over raspberry sorbet to make “raspberry sorbet bellinis.” Secondly, we were hired for the “day after event” following a wedding that wanted to have an interactive mimosa and bloody Mary bar. We had a variety of juices and blood Mary mix and chasers available, so the guests had the freedom to create their perfect drink.
Trends: Younger generations want to offer more health-conscious and inclusive drink options such as modern mocktails with nutrient-dense ingredients such as coconut water, vegetable juices, and kombucha. Additionally, we see drink options being chosen based on the theme of the event. For example, the Tuscany themed wedding had offered a Sangiovese Red Wine, Vermentino White Wine, Belletti Prosecco, Limoncello Spritz, and Italian negroni.

What: Mobile Mini Trucks LLC is a queer and women-owned business that operates a mobile flower truck, Mobile Mini’s Bloom Bar. We partner with local women-owned flower farms across Wisconsin to offer sustainably and ethically sourced blooms. I started this business to bring joy through flowers, highlight local farmers, and create opportunities for LGBTQ+ youth to work in an inclusive and supportive environment.
What options do you offer couples for their wedding days? We provide a unique and interactive Bloom Bar experience for weddings, where guests can create their own floral arrangements. Additionally, we offer custom bouquets, centerpieces, and even floral installations tailored to each couple’s vision.
How does using the Bloom Bar work? How can it be customized for couples and their special days? The Bloom Bar is a fun, hands-on experience where guests choose from a curated selection of fresh, locally sourced flowers to create their own mini bouquets or arrangements. Couples can customize the flower selection, colors, and even the wrapping to match their wedding theme. We can also include signage or decorations that reflect their personal story.
The Bloom Bar doubles as a memorable and creative wedding favor. Guests leave with their own custom bouquet, which is a beautiful and personal keepsake from the day. Next year, we have a wedding that is allowing their guests to create a vase bouquet to double as a centerpiece and take-home bouquet all in one. Truly, the possibilities are endless with us. What are some of your most popular floral options? Our most popular options include romantic garden ranunculus, whimsical dahlias and fragrant eucalyptus. We love incorporating seasonal blooms that are unique to the time of year, ensuring each event feels fresh and special. My girls offer me a variety of specialty floral that are just as unique as they are. It’s what makes the floral so special to us.
Fun facts: Our truck, Daisy, is not just a business tool—it’s a piece of history that we’ve lovingly restored to bring smiles to people across Wisconsin. And even though owning something vintage is cool, she does come with her challenges.
A fun fact is that Mobile Mini’s Bloom Bar is deeply community-focused, working exclusively with local, women-owned farms to ensure that every flower has a story.
On a personal note, I’ve always wanted to work for myself to gain flexibility and control over my schedule, which allows me to create a better work-life balance. While a lot of entrepreneurs are doing it all, my wife and I make it a priority to carve out time for each other. It’s important to us to grow this business while still nurturing our relationship and personal lives.
the wandering cart

What: I own the wandering table and the wandering cart is our newest addition that we launched in October. It’s Fox Valley’s first customizable cart. Primarily we’ve done charcuterie but the thought is that we can do anything that’s “build your own”: a dessert bar, a candy bar, cannolis. We’ve done a build-your-own chili bar too. Anything that you would want your guests to be able to customize is the thought behind it. It really isn’t limited in any way. The options are endless!
With the wandering cart, you have a display, an array of food. The cart has inserts in it, so you can come up and you can see exactly what’s there.
How does using the wandering cart work? Typically we’re there for about 2 hours, I’d say the max is 3… especially in the summer if we’re outside. We want to make sure everything stays cold and fresh. The cart is great for late-night snacks, dessert or even before dinner during the cocktail hour.
The booking includes an attendant. They serve, make sure the food is stocked and everything looks good.
How can the wandering cart be customized for couples? We have a master list for couples to choose from. It does not mean they’re limited to that, but it’s a good starting point and items that are easy for me to get. But if someone said “I love this particular meat” or “I love this kind of cheese,” we can do that.
On the list we have base items and premium add-ons. For example, if someone went with a Cannoli Bar, we could start with Cannoli shells and then include the fillings on the cart: pistachios, chocolate chips, some people do like orange, orange zest. Everyone can create their own and kind of dabble in what they like and not have to worry about what they don’t.
This really came from me being a picky eater. When my husband and I go out to eat and see a charcuterie board on a menu, I’ll maybe eat one of the things included so it’s not worth it. There are very few places that you can customize your charcuterie boards. We can do vegetarian, dairy-free and cater to any dietary restrictions.
If someone had a themed wedding, we can decorate to fit in with that theme. One of our weddings was a Gothic wedding. Everybody wore black and they had skeletons and a canoe set up with beer. We can incorporate your style. I can buy cocktail napkins that fit, things like that.
Fun facts: the wandering cart is completely and easily movable, so depending on your space and layout and where you want us to be, it’s very easy for us to move. We can work with you and your space. You’re not stuck. Our attendant can answer any questions guests have. Just having that personal touch of a welcoming face makes guests happy and willing to try the food.
I know grazing tables are such a big thing, and so it is a lot of work and they are incredibly expensive. So being able to kind of fit into a lot of different budgets is nice too.
