Outdoor Griddle Inspo

Q. “We just bought an outdoor griddle and we are loving it! Any fun recipes that we may not have thought of that would be perfectly prepared with it?” —Matt, Green Bay

A. All the rage in recent years, the outdoor griddle comes in many models and sizes. The best application for an outdoor, flat-top griddle is cooking for medium to larger sized crowds. Many people use it for brunch items like pancakes, French toast, breakfast meats and hash browns. I could also certainly see items like potato hash and rolled omelets being executed well. I don’t have one myself, but I’ve had some excellent smash burgers off others’ outdoor griddles. I think an outdoor griddle would be an impressive opportunity for sizzling fajitas with peppers, onions, and beef, pork, chicken or shrimp all wrapped up in a flour tortilla. For you griddled sandwich fans out there, picture a griddle full of grilled ham and cheese sandwiches, corned beef and Swiss cheese Reuben sandwiches, or a host of patty melt options. Why not some deliciously cheesy quesadillas? Get your hands on some gyro meat and you could really crank out some tasty gyros with griddled pita bread and tangy tzatziki sauce. Once you get thinking about it, the possibilities are endless!
