Broiled or Baked

Q. I want to start eating more fish. I would prefer to bake or broil it to reduce the use of fat, but I don’t want to under or overcook it. What is the proper timing for cooking fish in the oven? — Grace, Appleton096-CJ-fish

A. When using an oven to broil fish, excellent results can be achieved by utilizing relatively high temperatures with the heat coming down from the top. The best fish to use for broiling tend to be a little thinner as the broiling process is pretty quick, typically five to seven minutes depending on the thickness of the fish. Lightly season the fish and brush it with a little butter or oil to keep it from drying out.

Baking fish in an oven takes longer and the margin for error diminishes significantly, compared to broiling. Almost any thickness of fish can be used, but a typical fish steak or fish fillet will measure about an inch thick. Season the fish and bake it at a more modest 350° F for about 12-15 minutes for the best results. Also keep in mind that all ovens cook a little differently, so you may need to adjust the times or temperatures to produce the results you are seeking.
