Multi-Course Dinners

Q. “I want to create a multi-course dinner for my boyfriend, but I’ve always struggled with components being done at the same time. Can I prep early and microwave?” —Bridget, Little Chute

A. The quick answer to your question is yes. The key to any successful event, large or small, is planning. In the food service industry, the French term “mis en place” is commonly used, which is translated as “everything in its place.” The biggest benefit to pre-planning and pre-preparation is that they both provide you with organization and flexibility so you can spend time with your guests while they are with you, while still having a nice meal. Another considerable time saver is choosing menu items that can either hold or be combined at the last minute. For example, I recently made a savory pasta and vegetables side dish. I had the pasta and vegetables pre-cooked and cooled, and the savory sauce was seasoned and hot, so all I needed to do was combine the pasta and vegetables with the sauce and bring them to serving temperature and it was ready. The microwave can be a useful tool in last-minute menu service, as long as the items being reheated do not diminish in quality in a microwave. Good luck!
