Balsamic Chicken

The flavor combinations in this dish are some of the favorites of the Chef at Pullmans Restaurant. Balsamic Chicken is his “go-to” meal for special occasions at home. Pullmans’ website: http://pullmansrestaurant.com/.
Ingredients
2 - 6 oz. chicken breasts, raw
1/2 cup yellow onion, sliced
1/2 cup cherry tomatoes, halved
1/2 cup balsamic vinegar
2 tsp garlic, chopped
Salt and pepper to taste
Parsley, garnish
1/4 cup butter
Directions
Marinate the chicken with balsamic and garlic for 2 hours in refrigerator. Sear chicken in a hot skillet. Bake chicken with onions , tomatoes, salt, pepper, and butter in the oven at 165 degrees Fahrenheit until chicken is cooked to 165 degrees. Serve with your choice of starch and vegetable.
