Chocolate Zucchini Bread

Originally published in the August 2005 issue of FOX CITIES Magazine.

3 eggs, beaten
3/4 cup cooking oil
2 oz. Bittersweet Chocolate, melted
1 tsp. vanilla extract
2 cups white granulated sugar
3 cups flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1 cup walnuts, chopped
1/2 cup chocolate chips
2 cups zucchini, peeled, seeded, and grated

Preheat oven to 350°F. In a mixing bowl, combine all liquid ingredients. In another mixing bowl combine dry ingredients, slowly add dry ingredients to the liquid mixure. Fold the zucchini in to the batter. Grease and flour 3 small bread pans. Pour batter into pans. Bake at 350°F for about 1 hour.
