The Athenian Shrimp recipe I got when I worked at Karrass Restaurant in downtown Appleton (now the Apollon Restaurant). It was one of the dishes the owners Nick and George Karrass came up with and I tweaked it a little bit by adding artichoke hearts to it.
Saute butter and garlic clove in a pan, add shrimp peeled and deveined, cherry tomatoes, artichoke hearts, lemon juice, feta cheese and shrimp sauce. Let the shrimp mixture simmer in the pan until the shrimp are cooked and food is hot. Pour over your favorite rice, at Spats we use the 6 Grain Rice Blend, and top with more feta cheese.
